My protein pancakes

Who doesn’t love pancakes?! But they are so high in those awful simple carbohydrates and sugars…. Well,I have been experimenting with high protein pancakes since beginning to experiment with healthy eating years ago and I think I finally managed the perfect (simple)pancake

Ingredients:

  • 1 cup fat free cottage cheese
  • 3/4 cup egg whites
  • 1 banana –mashed
  • 2 scoops whey protein (I used Abouttime  vanilla)
  • 1/4 c instant oats
  • 2/3 cup blueberries (optional, or sub with fruit of choice)

mix all ingredients together. Use nonstick cooking spray and heat pan to low-medium (be patient! Let them cook longer on a lower heat or you will burn them! About two mins per  side)

Yeilds 9 pancakes when scooping with a 1/3 c portion

77calories 0fat 8 carbs 10 protein

Topped mine with peanut butter when I needed to fill in my fat macros

Topped with granola and light maple syrup on a high carb day

I eat 2 at a time– put them into Tupperware and have them for three mornings ! Delicious treat that is also a clean eat!
