Low-Carb spaghetti :Turkey Meatballs and Zucchini Noodles

A perfect low carb high protein dish to add to your meal prep! I used two whole zucchinis and split the noodles up between four meals (aka about 1/2 zucchini per meal….genius!)  if you do not own a vegetable spiraler stop what you are doing and buy one!! They are awesome! I got mine from Amazon  (See Link Below!!)

after spiraling the zucchini I put it all in a large microwaveable safe bowl with a lid, added a little water, and microwaved them for about three minutes to steam. Came out perfectly. Still a little crisp   cook longer if youd prefer, but I do not like my noodles soggy!

FYI, for this recipe, I used 3 packs of Jennie-o extra lean ground turkey   You do not need this much, but I meal prepped an entire meatloaf with the same recipe for two times the meal prep!

  • 3 packs extra lean ground turkey
  • 1 chopped red pepper
  • 1 cup chopped baby Bella mushroom
  • 1/2 whole yellow onion, chopped
  • 1 packet ranch or Italian seasoning
  • optional: eggs and breadcrumbs to desired texture
    **i did not add these, trying to keep carbs down to a very mininum , but since the turkey was extra lean it was on the dry side   Personally I was fine with it as it was served with the marinara sauce

For the sauce:

  • 1/2 c chopped yellow onion
  • 1 chopped green bell pepper
  • 1/2 c chopped baby Bella mushrooms
  • 1 jar marinara sauce of your choice

Heat veggies in large sauce pan with some no stick cooking spray until soft  add in spaghetti sauce and heat through

PER SERVING:  I added 1/2 cup sauce to 6oz meatball and 1/4 zucchini noodles
