Crockpot Eggwhite Breakfast Hash

  
Quick and easy breakfast recipe made in crockpot.  Because you’re using egg whites in the crockpot, I would stir occasionally–about every 30mins to an hour if you want a scrambled egg like consistency (which is what I did)  Put all ingredients listed into a crockpot, put on high and let cook for about 4-6 hours, stirring occasionally.

  • 1 carton of egg whites
  • 1/2 package of lean turkey breakfast sausage
  • 1/4 c yellow onion
  • 1/2 small package of small red ruby potatoes cut in halves or fourths depending on size.  (about 12 small potatoes)

In the pictures I doubled this recipe– but while cooking the crock pot was VERY full so I will not do this again!! The egg whites expand slightly while cooking and I had a little mess 😮  Also, when I make this again I would add 1-2 whole eggs to the mix for a little extra flavor.  But nevertheless, it was a great, quick and easy breakfast this morning– just microwave and go!

Breakfast set for the week!

You can vary this recipe adding any ingredients you would normally add to your omelets.  MY FAVORITE is egg whites, a whole egg, spinach, sweet potato, and turkey bacon.   YUM! 🙂
