Quick and easy breakfast recipe made in crockpot. Because you’re using egg whites in the crockpot, I would stir occasionally–about every 30mins to an hour if you want a scrambled egg like consistency (which is what I did) Put all ingredients listed into a crockpot, put on high and let cook for about 4-6 hours, stirring occasionally.
- 1 carton of egg whites
- 1/2 package of lean turkey breakfast sausage
- 1/4 c yellow onion
- 1/2 small package of small red ruby potatoes cut in halves or fourths depending on size. (about 12 small potatoes)
In the pictures I doubled this recipe– but while cooking the crock pot was VERY full so I will not do this again!! The egg whites expand slightly while cooking and I had a little mess 😮 Also, when I make this again I would add 1-2 whole eggs to the mix for a little extra flavor. But nevertheless, it was a great, quick and easy breakfast this morning– just microwave and go! You can vary this recipe adding any ingredients you would normally add to your omelets. MY FAVORITE is egg whites, a whole egg, spinach, sweet potato, and turkey bacon. YUM! 🙂
