Light Red, White, and  Blueberry Dessert Trifle

Happy Fourth of July Weekend! I hope everyone had a safe and fun, firework-filled holiday! I know it’s difficult to stay on a diet during the holidays, but shake it off and get right back to it come Monday! Remember:

Memories Over Macros. 

Life will go on after one BBQ filled with hot dogs, alcoholic beverages, and red, white, and blue sprinkled cookies!  I wanted to share with you a dessert I made over the weekend that was a hit! 

Now, I wouldn’t go meal prepping with it, as it is still high in sugars, but it’s a lower calorie option than most desserts at the party!  Plus it’s very asthetically pleasing 🙂

  
Red, White, and BlueBerry Dessert Trifle

  • Angel food cake, cut into cubes (I used pre-made)
  • 1 Light Cool Whip (you could make your own whipped cream–even homemade whipped cream made from coconut milk would be awesome! But I worked the night shift before and I was too tired for the extra steps)
  • 2 packages Fat free, sugar free cheesecake instant Jello mix 
  • Skim milk for jello (make as jello as prescribed on box, believe a total of 4 cups)
  • 2 lb strawberries 
  • 1 large package blueberries 
  • Optional: raspberries (Walmart did not have raspberries the day I went, so I went sans raspberries)

Cut up angel food cake into cubes. Prepare jello pudding as prescribed on box (add skim milk and whip for a couple minutes until set). As that is setting. Clean and cut your strawberries into quarters.

 ((Now, you have the option– you can combine whipped topping WITH pudding mixture for one topping, or you could layer separately, you’re call– I did both ways (made two desserts) and they both were delicious)) 

Once that is complete,  add cubes of angel food cake to bottom of a Trifle bowl just enough to cover bottom, add fruits, and then the whipped topping/pudding. 

Continue to layer the ingredients until trifle bowl is filled! And that’s all there is to it!  I bought my Trifle bowl at Walmart for about $15 –I recommend having one for pretty desserts and dips like this one. It’s a party hit!

  
Best part about this dish is that it is very versatile– switch up the fruits and pudding mix flavors. Peaches with vanilla pudding mix would be yummy 🙂 but I wanted something patriotic for the holiday!  What flavor combinations would you want to try? Post to Comments below!
